Peanut Butter Cookie Recipe

 

Peanut Butter Cookies

You will need:

130g (4.5 oz) butter

200g (7oz) soft light brown sugar

1 egg

2 drops of vanilla essence

200g (7oz) plain flour

1/2 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

300g (10.5oz) crunchy peanut butter

 

  1. Preheat the oven to 170C (325F) or gas mark 3
  2. Cream the butter and sugar together by hand or in an electric mixer until pale and fluffy
  3.  Add the egg and vanilla and mix well, then stir in the flour, baking powder and bicarb
  4. Gently stir the peanut butter through (I still do this in an electric mixer), be careful not to over-mix
  5. Make the dough into a ball and divide into 12 (for large cookies) or 24 (for biscuit size cookies)
  6. Make each into a ball then squash slightly. Place on an oiled baking tray, or on a baking sheet at least 10cm apart (5cm for the smaller cookies)
  7. Bake in the oven for 12-15 minutes or until golden brown
  8. Remove from the oven and use a spatula to transfer to a cooling tray, the cookies will be very soft, but will harden as they cool
  9. Try to wait till they are cool, then enjoy!

Store in an airtight container, or make extra as the cookie dough can be frozen before being baked.
